The most important step in processing (butchering) your own poultry is the scald. It is the foundation of a sanitary operation and quick plucking. These plans are a comprehensive guide to building a rotary scalder that maintains water at 147deg F, and automatically dunks up to 4 large broiler chickens or 1-2 large turkeys (we have tested up to one 32lb turkey). The large amount of water has good thermal stability, and the design allows modification in the future (automatic water filling, plumbing to a gas line, etc). It will produce a good scald in 60sec.

These plans are not for the novice DIYer. Although you dont need to be a master at welding, familiarity and competance at welding are required to make a watertight tub out of stainless steel sheet metal. Additionally, it is recommended you know where to buy metal locally, as shipping can be quite high for metal. The plan format is a PDF set of instructions on how to build an automatic chicken scalder from scratch. The motor and timer are electric, the heating is a propane burner under the tank.
